OUR STORY
The C.P. Sub Shop is a fresh chapter in a long Carleton Place tradition. Co-owner Chris Joly grew up here, and his late father, Danny Joly, ran Danny’s Meat Market in town for 20 years. Danny was known as an exceptional butcher and a big supporter of the community.
The combination sub was the house specialty at the meat market—and it was Danny's favorite. In 2024, Chris carried on that legacy. After opening his first shop in Brockville, he brought the classic combo home to downtown Carleton Place at 17 Moore St.
Together with his friend and business partner, Vibol Prak, they’ve built a place that feels familiar, welcoming, and proudly local. It’s more than just a shop—it’s a commitment to the flavours this town grew up on.
Our Passion
We just make good subs. At The C.P. Sub Shop, everything starts with simple, quality ingredients, prepared properly – no gimmicks, no secret sauces, and no over-the-top toppings. Just fresh bread, generous portions, and flavours that work.
Our signature Combination Sub is made with salami, ham, turkey, smoked meat, and cheese, fully dressed with lettuce, tomato, onion, pickles, hot peppers, mustard, mayo, salt, and pepper. It’s the same classic sandwich people remember from decades ago, made the way Chris’s dad taught him.
Half of our orders are still the Combination Sub – because once people try it, they come back for it.

We’re more than a sandwich shop – we’re a community shop.
Chris grew up playing sports, paddling at the canoe club, and building his life in Carleton Place. Vibol’s journey started much farther away – his family came to Canada as refugees from Cambodia, and he built his home, career, and family here in the Ottawa Valley. The Sub Shop is where their stories meet.
For us, family and community come first. We want to be known as the place where you can grab something quick, fresh, and affordable, without a long wait – and where we know our regulars by name.
This isn’t a big chain. It’s two friends, a shared dream, and a promise to serve subs that are made with care, just like they were 30 years ago.
